Hoppin' John.... A southerner's delight!

So, with the New Year in mind, I wanted to share a family favorite recipe & one that I prepared on New Year's Day as part of our traditional family dinner.  As we all know, 'black eyed peas' is one of the traditional 'good luck' foods for health that you're supposed to eat on New Year's Day.... well, let's just say that this dish isn't so delicious served as a side by itself.  It has that pungent earthy taste that most pallets do not prefer. Well, here's a dish that will have you coming back for a second serving.... it's called "Hoppin' John" & is traditionally a Southern Style dish that incorporates black eyed peas, veggies, ham,  served over a bed of rice.  

There are quite a few recipes out there for this dish & mine incorporates a few key items from each of them.  With Hoppin' John, you don't have to only eat black eyed peas on New Year's Day, this dish is a Winter delight & one that your family is sure to love throughout the year!

Ingredients

  • 1 tablespoon olive oil
  • 3-4 pieces of thick cut ham (1/2 inch each)
  • 1 cup onion, chopped
  • 1/2 cup freshly diced heirloom tomato
  • 1/2 cup green bell pepper, chopped
  • 1 tablespoon chopped garlic
  • 1 pound black-eyed peas
  • 1 quart chicken stock 
  • Bay leaf
  • Dash of crushed red pepper flakes
  • 1 teaspoon dry thyme leaves
  • Salt, black pepper, and cayenne
  • 3 tablespoons finely chopped green onion
  • 3 cups steamed white rice

Directions

Heat oil in a large soup pot, add the ham and sear on all sides for 4 minutes. Add the onion, green pepper, and garlic, cook for 4 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. The last 3-4 minutes, add fresh tomatoes, do not overcook.  Just warm up the tomatoes. Adjust seasonings, and garnish with green onions. Serve over rice.
